Whole Wheat Biscuit Mix Recipe

4 1/2 cups whole wheat flour
2 tsp baking powder
1 1/2 tsp salt
2 tsp cream of tartar
1/2 tsp baking soda
3/4 cups instant nonfat dry milk
1 1/2 cups shortening

In a large bowl mix dry ingredients.  Mix well.  Add shortening either with a pastry blender or mixer.  I use my Kitchen Aid and it works great.   Blend until well mixed and crumbly.

Store in a container in the fridge.

Drop or rolled biscuits

For drop biscuits combine 3 cups mix with 3/4 cup water.  Mix just until blended.  Drop onto baking sheet.  and bake 10-12 minutes

For rolled biscuits combine 3 cups mix with 2/3 cup water.  Mix just until blended.  Let rest for 5 minutes. Lightly knead.  Roll out on floured surface  to about 1/2 inch thick.  Cut into biscuits.  You can make round biscuits with a biscuit cutter or what I prefer to do is to simply use a pizza cutter and cut into square biscuits.  It is simpler and makes for less http://blog.simplycanning.com/wp-admin/post.php?post=932&action=editwaste and re-rolling.

For either style biscuit:  Bake at 450 degrees.  10-12 minutes or until lightly browned.


These can be made into various types of biscuits.

  • Add cheese or herbs, substitute buttermilk for the water.
  • Use the drop biscuits as a topping for a cobbler.
  • Use the rolled biscuits for cinnamon biscuits. Simply roll out the dough spread with butter, sprinkle on cinnamon and sugar. roll it up and cut into 1/2 inch slices. Bake 10-15 minutes.
  • Use as a pizza crust for individual pizzas
  • Use as a crust for a pot pie.
