Elk Green Chili Burrito Recipe

I tried something new tonight… thought I’d share. Elk Green Chile Burritos

Mix in 1 pint home canned tomatoes and one pint home canned pimento peppers (drain the peppers). And salt to taste, I used 1 1/2 teaspoons. Heat through, simmer gently for 10 minutes. Spoon some meat mixture into flour tortillas and sprinkle on some cheese.

Roll up and place in a baking dish. I did 6 tortillas. And used my nice little glass baking dish.
Then I realized this was NEVER going to be big enough to hold the green chile sauce (its still coming!) So I moved it all over to my just a bit larger stoneware pan.

ahhhh much better, now I won’t have a mess in my oven.

Now I used what I call Cheater Green Enchilada Sauce. IOW I didn’t make it… it came from a CAN! (gasp!) Pour green enchilada sauce over your burritos.  Bake at 350 degrees 20 to 30 minutes or until bubbly and heated through.

    I’m not good at this computer stuff, don’t know if I will even find your blog again. Just ate my first elk in a taco salad, it was awesome. Bring on the elk. I had a question about dill pickles. Have a problem, for the last five years. First the wrong salt, then the wrong water, then crunchy but hollow centers and some of them were fizzy when you bit them and then I used the wrong cider flavored vinegar. HELp. I’d like to try one more time.

    We love hot and spicy, but I need dill pickles for DUMMIES. I seem to be able to can anything else, just not dill pickles.

    I made up and froze your whole wheat biscuit but when I went to make some biscuits, I could not find anything that told me what liquids and other ingredients to add. Can you help me out?
